FOR THE FLAN:
½ cup MASECA® corn masa flour
7 eggs
1 can condensed milk (397grams)
1 1/4 cups milk
1½ cups cream cheese
FOR THE CARAMEL:
½ cup water
½ cup sugar
Preheat oven to 480°F (250°C).
For the Flan:
Beat eggs, MASECA®, condensed milk, cream cheese, and milk until mixture is smooth.
For the Caramel:
Boil sugar and water over very low heat until mixture becomes caramelized liquid.
Immediately place caramel into molds or ramekins; coat molds carefully and quickly as hot caramel hardens as it cools. Fill caramel-coated molds with flan mixture.
Cover each flan mold with foil and place all 12 in a deep pan filled with water. The water should come halfway up the molds. Bake in water bath (au bain-marie) for 45 minutes. Flans are ready when they appear to have settled and appearance is consistent.
