2 1/2 cups MASECA® corn masa flour
2 1/2 cups Selecta flour
1 Tbsp. Salt
2 Tbsp. Sugar
4 cups Water
2 Tbsp. Active dry Yeast
0.7 ozs. Vegetable shortening
1 Cup Olive oil

Topping:

3 cups Mozzarella, shredded
10.5 ozs. Pepperoni
10.5 ozs. Ham steak, cut into chunks
1/2 cup Pineapple, cubed
1/3 cup Pickled jalapenos peppers, sliced
1/2 cup Onion, sliced
2 cups Pizza sauce

Pre-heat oven to 480° F (250°C)

 

In a mixing bowl, add MASECA® flour, SELECTA® flour, salt, sugar, and water. Beat at medium speed for 6 minutes or until dough pulls away from the sides of bowl. Add yeast, shortening, and oil, beating until dough pulls away from the sides of bowl and forms a sticky ball.

 

Cover with a damp cloth and let dough rest for 15 minutes at room temperature or until double in size.

 

Divide dough into 12 sections. On a floured surface, roll a small ball of dough with a rolling pin to 1/4” thick round. You can use a plate the desired size and cut around it, or use a pizza tray to make the pizzas.

 

Place dough rounds on baking sheet and prick dough with a fork. Spread each round with one tablespoon tomato sauce and top with a generous amount of cheese, pepperoni, and jalapeño on some, and on others top with pineapple and ham or any other ingredients you enjoy. Bake for 20 to 25 minutes.
