Procedure
Dough 1
2 1/3 cups Selecta® all-purpose flour
3 tablespoons yeast
1 teaspoon salt
1 cup water
Dough 2
5 1/3 cups Selecta® all-purpose flour
Freshly squeezed juice from one seedless orange
2 cups sugar
3 eggs
1½ cups milk
3/4 cup lard
½ cup butter
For the Sweet Dough
2 cups MASECA® corn masa flour
1 egg
11 ounces butter
3/4 cup sugar
1 teaspoon baking soda
Pre-heat oven to 350°F (approximately 170°C).
For Dough 1:
Using your hands, combine dry ingredients for Dough 1 in a bowl. Add water and knead to form a stiff dough. Let dough rest until double in size.
For Dough 2:
Using a mixer with dough hook attachment, combine eggs, sugar and freshly-squeezed orange juice. Slowly add Dough 1. Add all SELECTA flour and milk at the same time; mix thoroughly for 6 minutes. Slowly add lard and butter and mix until dough no longer sticks to sides of bowl. Dough should be smooth and moist. Let dough rest in refrigerator until double in size.
To shape Three Kings Mexican Sweet Bread:
Sprinkle a flat surface with flour and shape dough into a ring (insert traditional little doll if you wish). Using a brush, glaze sweet bread with milk.
For the Sweet Dough:
Using a mixer, combine MASECA, butter, sugar, egg, and baking soda until dough is uniform. Place pieces of sweet dough on top of previously prepared and shaped dough. Garnish with crystallized fruit.
Let sweet bread rest for 20 minutes, then bake in pre-heated oven for 45 to 60 minutes.
